Birth of the Michel BRAS
The "Michel Bras" series of knives is inspired by the chef and artist, Michel Bras, and manufactured by KAI, the Japanese knife producer.
When the President of the Kai Group, Koji Endo, met Michel
Bras, he was attracted by the lively curiosity of this man who seemed to embody
all the virtues of an ancient sage. Endo knew that he wanted to create knives
that would live up to this exceptional chef. Michel had a similar reaction when
he visited an international trade fair and held in his hands a KAI knife: he
knew intuitively that KAI could create knives that would meet his ideals.
World-famous French chef Michel Bras believes that cooking, like any art, requires the best tools created in Japan. These knives, made in cooperation with KAI (Shun knife manufacturer), have wide blades for greater precision and a slight curve for easier movement.
Hand-assembled on exact specifications.
The matt coating of the blades consists of three layers stainless steel: a tempered core, pressed between two layers of flexible steel to increase life and durability. The blades are titanium coated to enhance antioxidant properties. Delicately polished with incredible sharpness, cutting effortlessly, sophisticated, beautiful ... these are the hallmarks of this knife collection designed by Michel Bras. Achieving a perfect synthesis of beauty and utility, of aesthetics and gastronomy is the goal of this great chef.
For quick identification, the knife has part number stamped
on the handle, which indicates the function and shape of the blade. The black
Pakka wood handle is designed in the traditional Japanese chestnut shape to fit
comfortably into your hand.
