The 8-in. length and razor-sharp edge are perfect for slicing, dicing, and chopping a full range of fruits, vegetables, and other foods. The wide blade keeps knuckles off the cutting board and comes in extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently rocked through fresh herbs or spices to produce a very fine mince.


The Shun Premier Chef’s Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

For the trend-setting Shun Premier Tim Mälzer series, Kai has developed six additional knives made from corrosion-resistant 32-layer damask steel. It is embellished with a hand-hammered surface which in Japan is known as Tsuchime, thus combining timeless aesthetic qualities with ultimate sharpness. The blades have a massive core of VG MAX steel with a hardness of 61±1 HRC.

In analogy to the limited Anniversary Knife, great importance was attached also in this series to the knives providing optimum grip as well as extraordinary hardness. The Shun Premier Tim Mälzer series, from bread knife to santoku, provides professional cutting tools which will set new standards in the premium segment by providing exceptional performance in a timeless design.

True to Tim Mälzer‘s premise, „A good knife not only makes work easier but also helps to make cooking to turn out well“, each of the carefully manufactured damask knives was meticulously adapted to its respective area of use by the Japanese master forgers from Seki City. Due to the particularly symmetrical shape of their walnut handle, all shapes moreover ensure a precise cutting performance for both right-handed as well as left-handed use.


Shun Premier Tim Mälzer Series

The Shun Premier Tim Mälzer series has been specifically tailored to the needs and requirements of professional chefs. In this premium series, the high-quality material properties of the well-known Shun Classic series are combined with a completely new and impressive overall appearance. The blade is divided into three different textures: the back of the blade to the middle of the blade has a hammered surface, known as Tsuchime. This texture is followed by a finely matted Damascus grain, typical of Shun. The blade is completed by its highly polished precision cutting edge. The meticulously machined blade is paired with a medium brown, grained, walnut wood handle. The blade's particularly hard and durable steel core ensures tremendous sharpness and long-lasting cutting performance.


The Shun Premier Tim Mälzer blade

The core of the Shun Premier blade is made of extremely hard VG Max steel and is encased in 32 layers of Damascus steel. This combination of different steel grades makes the blade both hard and flexible. The double-sided blade is easy to use because it is lightweight and guarantees a clean and precise cut. The hammered surface - known in Japan as Tsuchime - is used not only for aesthetic reasons, but also because it facilitates the removal of material from the blade, thanks to the small pockets of air which result.


The Shun Premier Tim Mälzer handle

The handle is made of walnut wood. Thanks to its symmetrical shape, it is suitable for both left-handed and right-handed users. An integrated tang ensures stability and balance when cutting. As a special touch, the handle end has been etched with a Tim Mälzer bull's head, the hallmark of the professional chef.
